For the gooseberry pickle, begin by thoroughly washing 250 grams of gooseberries before spreading them on a clean cloth to dry. In a saucepan, mix 250 milliliters each of apple cider vinegar and water with a tablespoon of caster sugar and a teaspoon of salt. Bring this mixture to a simmer over high heat, stirring until the sugar and salt dissolve. Once done, add the gooseberries, turn off the heat, and let them sit in the liquid for about 10 minutes.
